For most of us, the Ramadan time is a occasion to do fast with our families, praying and earning rewards of the month.  Not only this we celebrate our traditions by eating or sharing delicious foods. In this spirit of celebration, I am excited to share delightful Ramadan recipe that are sure to tease your taste buds and bring warmness to your gatherings: Homemade Crispy Potato Chips or simply Potato Pakora or Alo Pakora.

Potato Pakora/ Alo Pakora: The Taste of the Crunchy Snacks

Through just a few simple ingredients and a little bit of tender loving care, you can have a best Potato Pakora/ Alo Pakora to share during iftar or suhoor meals.

To begin, gather your ingredients: 2 potatoes (fairly large, sliced fairly thin); seasoning with salt, black pepper, and red chili powder; coating with All purpose flour and to produce the crunch and taste you need oil for frying. Begin with peeling and washing the potatoes, after you cut them into thin slices with a sharp knife or mandolin machine.

In a bowl, gently mix together the potatoes with black pepper, red chili powder, and salt until each slice is evenly coated. Slowly add all purpose flour to the spiced potato slices and move each spiced potato slice in the coating to ensure each slice has a proper coating. It is this flour coating that makes your chips a unique combination of crunchiness.

Ingredients for Chicken

  • 2 large potatoes

  • 1/2 tsp black pepper

  • 1/2 tsp red chili powder

  • 1/2 tsp salt

  • 60gm wheat flour or all purpose flour

  • Oil for frying

Directions

  • Start by peeling and washing the large potatoes. Once clean, cut them into thin slices using a sharp knife or a mandoline slicer.

  • In a mixing bowl, add the sliced potatoes and sprinkle black pepper, red chili powder, and salt over them. Gently toss the potatoes to ensure all the slices are evenly coated with the spices.

  • Gradually add the wheat flour to the spiced potato slices, ensuring they are well coated. The wheat flour helps in achieving the desired crispiness of the chips.

  • In a deep frying pan, heat oil over medium to low heat. To check if the oil is hot enough for frying, drop a small piece of potato into the oil. If it sizzles and rises to the top, the oil is ready for frying. Carefully add a batch of the spiced and coated potato slices into the hot oil. Make sure not to overcrowd the pan to ensure even frying.

  • Fry the potato slices until they turn golden brown and crispy. This may take a few minutes on each side. Use a slotted spoon to remove the fried chips from the oil and place them on a plate lined with paper towels to absorb excess oil.

  • Repeat the frying process with the remaining batches of potato slices until all the chips are fried to perfection.
