  • Boiled rice: 60g

  • 2 whole eggs

  • 1 egg white liquid

  • Olive oil/coconut oil: 1 tbsp.

  • Onion: 1 small (diced)

  • Carrot 1 small (diced)

  • Bell pepper (half)

  • Garlic clove: 2 chopped

  • Boiled green peas: 50g

  • Soy sauce to taste

  • Salt and pepper to taste

Directions

  • Saute onion, bell pepper, carrot, and boiled peas in oil.

  • Season with salt, pepper, and soya sauce.

  • Combine with boiled rice. Scramble the eggs in another pan.

  • Top the eggs on vegetable fried rice. Serve hot.
